Koch’ujang is a relatively new food in Korean cuisine as chilli peppers 44 were not introduced to the peninsula until the late sixteenth century. Sesame oil (ch’am kiru˘m) and perilla oil (tu˘l kiru˘m) are the chief oils used in preparing foods, sauces and dipping sauces. Sesame oil, made by crushing sesame seeds, has a fragrant scent that accents the taste of food and is used in the preparation of meats and vegetables.

Sukch’ae, meaning cooked vegetables, can be further divided into two sub-categories depending on cooking method. First are those vegetables that are served after parboiling and seasoning. After parboiling vegetables, they are then drained and lightly seasoned with condiments such as salt, kanjang, koch’ujang, garlic, chilli pepper powder and sesame oil. The other category is those vegetables that are cooked in a pan with a small amount Various vegetables can be served as ssam.
